Meal Plan Monday

Good afternoon everyone! :)  It's time for my first installment of 'Meal Plan Monday'.  This is a weekly linky hosted by my sweet friend Tammy over at the Resourceful Apple! :)  Both the hubs and I love to cook and so, I'm really looking forward to the weekly link up to share some of my recipes! ;)  Today I'm going to show you some pictures of my Low Country Boil Recipe! :)

Low country boil is something that is native to the low lands of South Carolina.  A few weeks ago, one of my childhood friends came down for vacation from South Carolina.  To 'welcome' her here, I made low country boil for her and her family! :)  It was a hit! :)  It's super simple to do and doesn't even take long!  Who doesn't like a one pot dish!!

I used red potatoes, kielbasa, and fresh shrimp from the grocery store.
I quartered a lemon and put that into a huge pot that contained my boil seasoning.
The boil seasoning can be purchased at any grocery store.  I used Zatarans...but there are lots of others! :)

Once you have a rolling boil, add the potatoes and the sausage.  When the potatoes are cooked, you'll add the shrimp.  Fresh shrimp doesn't take long to cook...about two to three minutes.  When the shrimp are nice and pink, drain off the water.  Grab some newspaper or paper towel to cover the surface you're eating on.  Pour the contents of the pot right.on.the.table.  That's my favorite part! :)  Start eating with your hands! :) At my place, I gave everyone a little 'garbage bowl' for the shells of the shrimp and tons of napkins.  I served it with fresh sweet tea and sliced oranges!
I hope you'll try out this recipe! :)  It was delicious and a total crowd pleaser!  If you're interested in other easy teacher-on-the-go friendly recipes...check out my Pinterest board, Teacher Foodies!  In the meanwhile...go on over to Tammy's blog and link up or check out the other girls who are posting their recipes this week!
